Peas & Green Zucchini Recipe

1 small yellow onion
2 tbsp. Virgin Olive Oil
2 ripe plum tomatoes chopped (optional)
2 cups frozen peas
4 med zucchinis cubed
2 cups chicken stock
1 tsp. organic chicken base bouillon
salt, pepper to taste

Saute onion, tomatoes until tender in olive oil.
Add zucchini, chicken stock and base to cover.
Simmer 10-15 minutes.
Add frozen peas and continue cooking 5 minutes.
Garnish with fresh basil and grated cheese.
If desired, add 1 cup cooked rice.
