1 c. White Corn Meal water ground
1/2 c. sifted flour
1 clove garlic crushed
2 tbsp. baking powder
1/2 tsp. salt
2 eggs beaten
3/4 to 1 c. milk
1 tbsp. grated onion
Rub Bowl with garlic and discard.
Place Corn Meal, flour, baking powder and salt in bowl.
Add egg and enough milk to make a stiff batter.
Add onion and mix well.
Cover bowl and place in refrigerator until batter becomes spongy.
Set heat at 425ºF and heat shortening.
Drop batter from tablespoon and fry 4 to 5 minutes.
Drain on absorbent paper.
The large amount of baking powder gives a puff ball lightness.
Serve with fried fish.
