3 c nonfat beef, chicken or vegetable broth (beef is best)
2 garlic cloves, minced
1 Tbsp tomato paste
2 c cabbage, chopped
˝ yellow onion
˝ c carrot, chopped
˝ c fresh green beans
˝ c chopped zucchini
˝ tsp basil
˝ tsp oregano
Salt and pepper, to taste

Directions:
Directions:
1. Spray pot with non-stick cooking spray; sauté onions, carrots and garlic for 5 minutes.
2. Add broth, tomato paste, cabbage, green beans, basil, oregano and salt and pepper to taste.
3. Simmer for about 5-10 minutes until all vegetables are tender.
4. Add zucchini and simmer for another 5 or so minutes.

I make large batches of this and freeze it. I also like to add fresh mushrooms.
