1 stick of butter
1 medium bell pepper, chopped (½ cup)
½ cup yellow onion, chopped
1 can (10¾ oz.) cream of chicken soup
1 can (10¾ oz.) cream of mushroom soup
1 can ROTEL diced tomatoes and green chilis, undrained
2 cups chopped cooked chicken breast
12 corn tortilla (6 inch) torn into bite-sized pieces
2 cups shredded cheddar cheese

1. Preheat oven to 325º. Melt butter in a large saucepan over medium heat. Add bell pepper and onion. Cook and stir about 5 minutes or until tender.
2. Stir in both soups, tomatoes with liquid and chicken; blend well.
3. Spray 13 x 9-inch baking dish with cooking spray. Layer ⅓ of tortillas, tomato mixture and cheeses evenly in dish. Repeat layer two more times.
4. Bake, uncovered, 40 minutes or until hot and bubbly.
