1 (10 oz.) package frozen chopped spinach, thawed
½ (8 oz.) package cream cheese, softened
1 cup ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp. dried Italian seasoning
¼ tsp. salt
8 dried manicotti shells, cooked (Can also used large shells which are easier to stuff.)
2 cups pasta sauce
½ cup freshly grated Parmesan cheese

1. Press spinach between layers of paper towels to remove excess moisture. Combine spinach, cream cheese, and next 5 ingredients, stirring well. Stuff mixture evenly into manicotti shells.
2. Pour ½ cup pasta sauce into a lightly greased 11- x 7-inch baking dish; arrange stuffed shells over sauce. Spoon remaining pasta sauce over the shells.
3. Cover and bake at 350º for 30 minutes or until thoroughly heated. Sprinkle with ½ cup Parmesan cheese; bake, uncovered, 5 more minutes or until cheese melts.

You can also add some shredded carrots to the filling. I have also spread the mixture onto cooked lasagna noodles to 1 inch of the end and then rolled up!
