1 tsp. ground black pepper
1 tsp. dried thyme
1 tsp. dried basil
1 tsp. garlic powder
½ tsp. onion powder
¼ tsp. dried oregano
¼ tsp. cayenne pepper
2 Tbsp. butter
1 Tbsp. olive oil
6 (6 oz.) red snapper fillets
Salt to taste

1. In a small bowl, mix together paprika, black pepper, thyme, basil, garlic powder, onion powder, oregano, and cayenne pepper.
2. In a small saucepan over medium heat, melt butter with oil. Brush both sides of the snapper fillets with the butter mixture, reserving remaining butter mixture. Coat both sides of the fillets with the seasoning mixture.
3. Heat a large skillet over high heat until a drop of water sizzles in it. Drizzle half of the remaining buttered mixture on 1 side of each fillet. Place fillets, buttered side down, in hot skillet. Cook until the fish is crowned on the bottom, about 5 minutes. Drizzle remaining butter mixture over the fish and flip the fish over. Cook until fish is browned and flakes easily with a fork, about 5 more minutes. Season to taste with salt.
