Ingredients:  
1 Onion chopped
1/4 cp Olive Oil
2 stalks Celery chopped
2 tsp Minced Garlic
1 tsp Oregano
1 Bay Leaf
1tsp Basil
1 cp Dry Lentil Beans
4 cps Chicken Broth
1/2 tsp Salt
1/2 tsp Black Pepper
1 tbsp Lemon Juice

Directions:
Directions:
1. Over medium low heat saute carrots and celery in Olive oil
2. Once celery is tender add onions saute until tender
3. Stir in garlic, Bay Leaf, oregano and Basil
4. In a large pot bring chicken broth to a boil over high heat
5. Reduce heat to medium low
6. Add lentils, saute mixature, salt and pepper
7. Simmer about a hour
8. Remove from heat; add lemon juice and serve
