1 whole chicken or 4 breasts
1 onion, chopped
2 carrots, diced
2 stalks celery, sliced
1 clove garlic, minced
3 cup flour
2 eggs
6 T. butter
1 T. salt
3 to 4 T. cold water

Directions:
Directions:
Cook chicken in large Dutch Oven until tender. Remove chicken from broth and strain if desired. Add onions, carrots, celery, and garlic to broth and simmer 15-20 minutes. Meanwhile, mix flour, eggs, butter and salt. Add water by tablespoons until dough is formed. Roll out on floured board as thin as desired. Cut strips of dough and drop into boiling broth with vegetables. Bone and dice chicken into bite size pieces. Add broth, you may need to add more liquid.
