4 large potatoes
1 yellow onion, chopped
1 c fresh mushrooms, cut or sliced
1 c fresh asparagus, cut
1 pkg onion soup mix
2 Tbsp olive oil

Directions:
Directions:
1. Preheat oven to 425.
2. In large Ziploc bag, mix olive oil and onion soup mix.
3. Add all ingredients and gently shake until coated.
4. Pour into baking dish.
5. Bake for 30 minutes or until potatoes are tender.

You can also add pre-cooked ham, hamburger, or sliced sausage if you want to make it a complete meal.
