1 lb. whole chicken breast
2 Cans cream of Chick soup
1 C. salsa
2 C. frozen or canned (drained) corn
1 can black beans (rinsed and drained)
1 ½ C. water
1 t. cumin
½ t dried cilantro (opt)
1 C. shredded cheddar cheese

Directions:
Directions:
Spray crock pot with nonstick spray. Place chicken into cooker. In a bowl, mix together cream of chicken soup, salsa, corn, beans, water, cumin and cilantro. Pour over the chicken. Cook on low 4-6 hrs. or high for 2-3 hrs. Remove chicken and shred with a fork. Put back into crock pot and add cheese and let cook for 15 more min. Serve with tomatos, cheese, avocado, sour cream or crushed tortilla chips if desired.
