2 T olive oil
2.5 pounds chicken
salt
pepper
1 onion sliced
2 cloves garlic chopped
1 t cumin
1 t cinnamon
1/2 t coriander
1/2 t ginger
1 c chicken broth
1/2 C green olives
1/2 c dried apricots halved
1 T preserved lemon or can use juice
1/4 C parsley chopped
almonds

Directions:
Directions:
Heat oven to 425
Heat oil and season chicken with salt and pepper
Cook skin side down for about 10 min. Flip and cook for 1 min more. Remove from pan.

Add onion and cook for about 8 minutes. Stir in spices and cook another 5 minutes
Stir in broth and stir.

Return chicken and add olives, apricots and lemon.

Transfer to oven and cook another 8-10 minutes until done.

Sprinkle with almonds and parsley.
