2 heads cauliflower, separated into florets
3 cloves garlic, chopped
2 small onions, chopped
Place in a bowl and drizzle with 1 Tb olive oil. Toss together and sprinkle salt and pepper. Place on a cookie sheet and roast in a 425 degree oven for 30 minutes tossing to cook evenly.
Transfer to a soup pot and add:
3 cups chicken broth
1-2 bay leaf
1 tsp dried thyme

Directions:

Cook over medium heat for 30 min., remove bay leaf and puree the soup.
Return to soup pot and add 4 cups half and half. Bring to a simmer and thicken with 2 Tb cornstarch and 1/2 cup milk or to your preferred consistency.
