Coconut Curry Chicken Recipe

2-3 lbs chicken meat - cut up
3-4 Tbsp Coconut Oil
1-2 Tbsp minced garlic
1-2 Tbsp curry paste
1-2 Cups chopped Onions
put oil & garlic in a pot on med/high heat
then add onions, curry and chicken
Cook and stir a few minutes - then add
1 can chicken (or beef) broth

When chicken is cooked - add
2-4 cups your choice of Veggies, cut up bite size
(broccoli, carrots, celery, mushrooms, cabbage)
When veggies are barely tender - add
1 can Coconut Milk
Salt & Pepper to taste (I like Lemon Pepper also)
stir and heat again - then serve with
Steamed Rice - white or brown
