1-1/4 cups graham cracker crumbs
2 Tbsps. sugar
3 Tbsps. margarine or butter, melted
2 packages (8 ounces each) plus 1 package (3 ounces) cream cheese, softened
1 cup sugar
1 Tbsp. grated lemon peel
1/4 tsp. vanilla
3 eggs
1 cup dairy sour cream (or cherry or strawberry pie filling)

1. Heat oven to 350º.

2. Mix cracker crumbs, 2 Tbsps. sugar, and the melted butter or margarine.

3. Press mixture in the bottom of a 9-inch springform pan with a glass that has a flat bottom.

4. Bake 10 minutes; cool.

5. Heat oven to 300º.

6. Beat cream cheese in a large mixer bowl.

7. Add 1 cup sugar gradually, beating until fluffy.

8. Add lemon peel and vanilla.

9. Beat in 1 egg at a time.

10. Pour over crumb mixture.

11. Bake until center is firm; about 1 hour and 10 minutes.

12. Cool to room temperature.

13. Refrigerate at least 3 hours, but no longer than 10 days.

14. Loosen edge of cheesecake with a knife before removing side of pan.

15. Beat sour cream until creamy and spread on top of cheesecake or top with either cherry or strawberry pie filling.
