Crust:
1⅓ c graham cracker crumbs
c sugar
6 Tbsp butter, melted

Cheesecake:
2 pkgs cream cheese, cubed
1 c sugar
1 tsp lemon rind, grated
3 eggs

Topping:
1 c sour cream, room temp
2 Tbsp sugar
1 tsp vanilla

Directions:
Directions:
1. Preheat oven to 300.
2. Combine graham cracker crumbs, cup sugar and butter.
3. Press into bottom and half way up sides of 9 inch pan.
4. In large mixing bowl, beat cream cheese until smooth.
5. Gradually add 1 cup sugar, beating until fluffy.
6. Add lemon rind.
7. Add eggs, one at a time, beating until blended.
8. Pour into pan and bake for 60 minutes. Turn off oven.

To prepare topping:
1. Combine sour cream, sugar, and vanilla.
2. Carefully spread over cheesecake and return to oven for 30 minutes with door ajar.
3. Remove from oven, cool and refrigerate at least 3 hours or overnight.
