2 tbsp. Dijon mustard
tsp salt (optional)
⅛ tsp cayenne pepper
4 (4 oz.) boneless, skinless chicken breast cutlets
cup panko bread crumbs
1 tbsp. chopped parsley
1 tsp garlic powder
cooking spray

Directions:
Directions:
1) Preheat oven to 425. Lightly coat a baking sheet with cooking spray.

2) In a large bowl, mix mustard, salt, if desired, and cayenne pepper. Add chicken and turn to coat completely; set aside.

3) In a resealable plastic bag, combie Parmesan chees, bread crumbs, parsley, and garlic powder. Transfer chicken to bag and shake to coat completely, pressing mixture onto chicken.

4) PLace chicken on prepared baking sheet and lightly coat with cooking spray.

5) bake 15 to 20 minutes, or until cooked through. Serve immediately.
