2 tbsp. butter
2 cups chopped leeks (white parts only)
1 cup chopped yellow onions
4 cups chicken stock
5 cups or 2 10 oz. pkgs of frozen peas
⅔ cup fresh mint

creme fresh & fresh chives for garnish

Directions:
Directions:
Heat butter & saute leeks (white parts only) and onions on low heat 10 minutes.
Add stock, increase heat - bring to boil.
Add peas cook 3-5 minutes.
Add mint.
Puree in food processor.

This is delicious served cold with a dollop of creme fresh and fresh chives.
