Ingredients: Zucchini Pancakes
2 large zucchini 3 eggs 1/4 cup flour 1/4 cup grated Parmesan cheese 1 tsp salt 1 tsp freeze-dried chives 1/2 tsp sugar 1/2 tsp garlic powder 1/2 tsp oregano 2 tbsp oil Parmesan cheese
Chef's Sauce
1/2 tsp oregano 1 can (15 oz) spaghetti sauce with meat 1 tbsp dried minced onion 1 tsp sweet basil

Directions:Grate unpeeled zucchini on coarse grater. Press grated zucchini between layers of paper towel to remove excess moisture.
Combine zucchini with remaining ingredients except oil. Heat oil on a griddle or in a large frying pan.
Ladle one-third cup of zucchini mixture into pan for each pancake. Flatten pancakes with the back of spatula.
Cook until well browned on one side: flip and brown second side. Top pancakes with Chef's Sauce and grated Parmesan cheese.
For Chef's Sauce combine all ingredients. Blend well and heat thoroughly. Serve hot over zucchini pancakes.
Allow two or three cakes per person. |
