1 yellow onion
¼ cup olive oil
4 cups peeled pumpkin, coarsely chopped
1 sweet apple, diced
1 quart chicken stock
Spices

Directions:
1. In a medium-sized stockpot, heat the olive oil. Add the onions, and sautée until brown, about 5 minutes.

2.Add the pumpkin and apple and sautée for a minute, then add the stock and bring to a boil. Reduce the heat to a simmer, and cook for 20-30 minutes, covered. Stir the soup occasionally.

3. When the squash and onions are fork tender, the soup is done. Taste and season with spices and salt. Puree in a blender, or mash big chunks of squash with a potato masher. Garnish with a sprinkling of a colorful spice like chili powder or paprika.

The pumpkin can be roasted instead of sautéed. 450 degrees for about 30 minutes (or until soft).
