1 tbsp olive oil
1 lb lean ground beef or chicken pieces
1 1/2 cups diced yellow or red onion
2 - 3 cups beef or chicken broth
1 15 oz can diced tomatoes
1 15 oz can black beans
1 15 oz can kidney beans or pinto beans
1 4 oz can chopped green chilies
1 1/4 cups corn kernels, fresh or frozen
2 1/2 tsp chili powder
1 tsp ground cumin
1 tsp paprika (or instead use 2 tbs taco seasoning mix)
1 tsp salt
to serve: tortilla chips, sour cream, chopped cilantro, diced red onion, lime juice

Saute beef and onion in hot olive oil to brown. Combine all ingredients and cook on low for 6 to 7 hours. Or - cook for 30 minutes in Instant Pot. Serve in bowls topped with, tortilla chips, sour cream, cilantro, red onion and lime juice.
