2 squares unsweetened chocolate (see note below on how to use cocoa and oil instead)
1 cup sugar
½ tsp vanilla extract
2 eggs
1 ½ cup flour
1 tsp baking powder
⅛ tsp cinnamon
½ cup milk
Optional: 1 cup finely chopped pecans, walnuts, or almonds)

Note: Mix 1 Tbsp oil of choice with 3 Tbsp cocoa for each square unsweetened chocolate

Melt the chocolate in a heavy saucepan. Add vanilla and cool. Add eggs, one at a time, beat well.

Sift sugar, flour, baking powder and cinnamon.

Add alternately, milk and dry ingredients to the chocolate. Stir after each addition. Add nuts if using. Bake in hot waffle maker. When first removed from the waffle maker, the waffle will be soft, but it will get crisper as it cools.

Serve with syrup, whip cream, or if desired, a scoop of vanilla ice cream and hot fudge sauce. YUM!
