1 cup flour
2 eggs
½ cup milk
½ cup water
¼ tsp salt
2 Tb¼sp butter, melted

Directions:
Directions:
In a large mixing bowl, whisk together the flour and the eggs. Gradually add the milk and water, stirring to combine. Add the salt and butter. beat until smooth. (You may mix in a blender as well at low speed).

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop batter onto the griddle using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter costs the surface evenly and very thin.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve warm, with cream and fresh fruit.

For a dinner crepe, serve with a chicken, vegetable pot pie type filling.

Goodin Puddin is great for crepes as well. Prepare instant vanilla pudding. Mix equal parts pudding and whipped cream (cool whip) together gently. Use instead of full cream.
