1 cup spelt flour (or Wonder flour)
1 cup oat bran
packed brown sugar ( or coconut sugar)
2 tsp baking powder
tsp sea salt
1 cup milk
1 egg
cup honey
2 Tbsp coconut oil, or light olive oil

Directions:
Directions:
Pre-heat oven to 425 Line 12 medium muffin cups with paper baking cups. Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened. Fill muffin cups 3$ full. Bake 14-17 minutes or until golden brown.

Variation: Stir in cup frozen blueberries.
OR use applesauce rather than oil and add 1 medium ripe mashed banana.

These are great the next day if you seal them in a baggy and stick them in a container to keep them fresh.
