1 butternut squash
1 large sweet potato
1 medium yellow potato
2 large carrots
1 onion
2 cloves of garlic
2 1/2 cups of vegetable broth
1 tbsp of butter
1 tbsp cinnamon
Salt/pepper to taste

Directions:
Directions:
1) peel and dice all of the vegetables/ mince the garlic
2) in a large pot brown melt some butter and brown the onion and garlic
3) add the rest of the vegetables and vegetable brother
4) cover and put the heat to a medium temperature for 20 minutes or until all the vegetables are soft
5) with a potato masher or in a blendtech/vitamix blender - purée the soup
6) place back into pot and add cinnamon, salt and pepper

My mom showed me this recipe before I left for university so that if I couldn’t handle anything else I could at least make one really good cozy rainy day soup during the fall and winter months. Everytime I make it, it reminds me of home.
