1 tablespoon flour
½ teaspoon salt
1 pound beef sirloin, cut in 1/4 " wide strips
2 tablespoons butter
1 cup mushrooms, thinly sliced
½ cup onion or shallots, chopped
1 clove garlic, minced
2 tablespoons butter
3 tablespoons flour
1 tablespoon tomato paste
1 can beef stock or beef broth
1 cup sour cream
2 tablespoons sherry

Directions:

1. Combine 1 tablespoon flour and salt; dredge meat in mixture.
2. Heat skillet; add 2 tablespoons butter. When melted, add sirloin strips and brown quickly, flipping meat to brown all sides.
3. Add mushroom slices, onion and garlic; cook 3 or 4 minutes or until onion is barely tender.
4. Remove meat and mushrooms from skillet. Add butter (2 tablespoons) to pan drippings; when melted, blend in flour (3 tablespoons). Add tomato paste.
5. Slowly pour cold beef stock — cook, stirring constantly until mixture thickens. Return browned meat and mushrooms to skillet. Stir in sour cream and sherry; heat briefly.

Serve over noodles.
