2 lbs Lean ground beef
1 Onion chpped
1 Pkg Taco Seasoning
1/4 t Pepper
1C Cream Cheese - with jalapeno if possible
3/4 C Taco Sauce
2 lbs Shredded Cheese - Monterey Jack, Tex Mex, Sharp Cheddar

1. Brown beef in a large skillet, add chopped onions 1/2 way through and cook until translucent. Season with Taco Seasoning, pepper, and cream cheese. Add 1/2 the shredded cheese and 1/2 the taco sauce. Heat through until the mixture becomes a thick soup.

2. Place 4 - 5 T of the mixture on a tortilla shell roll up and bring in the ends of the shell to create a "wrapped package". Place each package seam side down on a greased 9" by 13" casserole dish. Top with remaining cheese and taco sauce.

3. Bake at 350 for 20 minutes or until cheese melts and the packages or heated through.

4. Serve with garnishes, sliced jalapeno peppers, sour cream, salsa or your favourite Mexican topping.

Made this for Jan on a trip to Lincoln City May, 2018 It made 8 large burritos - so it probably could feed 8. It freezes and can be defrosted and still taste great.
