1 spaghetti squash
1 cup feta cheese, plus more for topping
1 small red onion, chopped (about 1/4 cup)
1 lb Italian sausage or turkey sausage with Italian seasonings
10 kalamata olives, chopped
3 TBSP Italian dressing
salt and pepper to taste
2 tomatoes, chopped
1 cucumber, chopped

1. Cut the spaghetti squash in half, place in large baking dish with some water in the pan. Cover and roast at 375º until tender, about 45 minutes to 1 hr. Tease the spaghetti squash out of the shell and place the spaghetti squash in a large mixing bowl.

2. Meanwhile, brown the sausage and onion in a skillet. Rinse and drain.

3. Add sausage and onion to the warm spaghetti squash in the mixing bowl. Add the olives, Italian dressing, salt and pepper, feta cheese, tomatoes, and cucumber. Serve immediately. Top with additional feta cheese.
