Ingredients: 12 corn tortillas 1 lb ground beef or turkey 3 Tbsp chopped onions Salt and Pepper 2 cans Ranch style beans 2 cans cream of chicken soup 1 can Rotel tomatoes and green chilies (can use hot, mild or even 2 cans if you like it super spicy!) 8 slices of American or Velveeta cheese 16 oz shredded cheddar cheese

Directions:1. Preheat 375º. 2. In a large skillet brown meat, onions. Season to taste with salt and pepper. 3. Add soups, beans, and Rotel and stir together until all ingredients are hot. 4. Line the bottom of a 9x13 glass pan with 6 tortillas. 5. Cover with one half of the meat mixture. 6. Space out the slices of cheese on top of the meat mixture. 7. Layer the other 6 tortillas on top and add the rest of the meat mixture and cover tortillas well. 8. Cover the top with the cheddar cheese. 9. Bake for about 20-25 minutes or until the cheese is melted and bubbly hot. |
