Ham Hock
4 medium-large (5 to 6 inches long each) potatoes - peeled and cubed
1/4 cup onion- thinly sliced
Salt
Pepper
Flour

Or you can use leftover stewed potatoes and add flour.

Directions:
Directions:
In a saucepan, cook the ham hock in the water until done. Remove the ham hock from the water. (You can slice a few pieces of ham from these and make ham biscuits)

Add the potatoes and onion to the ham juice. Add in salt and pepper. Cook with the cover on until they are done. Note: the water will become like a sauce. Once they are done, cool in the refrigerator. Or if you have leftover stewed potatoes, this is a great way to use them up.

Add a little flour and then shape them into small patties, about the size of a hamburger. Fry in a hot skillet until both sides are browned.
