4 1/2 cup sugar
1 cup corn starch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
10 cups water
3 T lemon juice
6 quarts apples

Directions:
Directions:
Peel and slice apples and fill jars tightly (about 6-7 quarts). Wide mouth jars are simplest. Cook remaining ingredients except lemon juice until thick and bubbly. Add lemon juice. Cover apples with syrup, using a wooden spoon handle to push down and get rid of bubbles. Process jars for 20 minutes in water bath.
