2 lbs Fresh green beans
1 Tbs Butter or margarine
1 Tbs Olive oil
1 Medium-sized purple onion, chopped
2 Tbs minced fresh oregano
¼ tsp Salt
⅛ tsp Pepper

Directions:
Directions:
Cook green beans in boiling water to cover 5 minutes or until crisp tender; drain and set aside. Place butter and olive oil in a large skillet over medium high heat until butter melts and oil is hot. Add onion, and saute’ Until tender. Reduce heat to medium; add oregano, sauté 1 minute. Add green beans, and cook, stirring often, 5 to 8 minutes or until tender. Toss with salt and pepper.

Super! You may substitute fresh dill, basil, or thyme for oregano. Or substitute dried herbs and use 1 tablespoon instead of 2.
