Mini cheesecakes Recipe

16 oz. softened cream cheese
c. sugar
1 tbsp. lemon juice
1 tsp vanilla
2 eggs
1 box vanilla wafers

Beat cream cheese until soft.
Add sugar and beat until creamy.
Add lemon juice and vanilla.
Beat in 2 eggs, 1 at a time.
Place 1 of a vanilla wafer in the bottom of a muffin cup
Top with cheese mixture.
Bake at 350 for 12 minutes

Let cool for 60 minutes.

Garnish with fresh fruit, jam or pie filling.
