1 ¼ c. vegetable oil
3 eggs
2 tsp. vanilla
1 c. sugar
1 tsp. salt
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
2 c. finely shredded carrots

Frosting
1 pkg (8oz.) cream cheese
1 tbsp. milk
1 tsp. vanilla
4 c. powdered sugar

or you can cheat and buy 1 container cream cheese frosting and add an additional cream cheese (8oz.)
beat together until creamy.

Directions:
Directions:
Combine cake ingredients in a bowl and mix until low until smooth and creamy.
Do not over mix or beat.
Pour mixture in a 9 x 13 greased cake pan.
Bake at 350º for 1 hr.
Cool for atleast 30 minutes.
Frost and serve.
