1 1/2 C dark brown sugar
3/4 C canola oil
1/3 C unsweetened applesauce
4 eggs
2 C all-purpose flour
2 t baking soda
2 t ground cinnamon
1/8 t ground nutmeg
1/2 t salt
1/8 t ground ginger
2 1/2 C grated carrots ( about 3/4 lb carrots)
1/3 C chopped walnuts

FROSTING

1 C confectioners sugar
12 oz reduced fat cream cheese
1/2 t vanilla extract

Heart oven to 350º F
Grease and flour a 10 cup Bunt pan

MAKE THE CAKE

Combine brown sugar, oil applesauce, and egg whites in large bowl and stir to blend. In separate bowl mix together flour, baking soda, cinnamon, salt, nutmeg, and ginger.

BEAT

dry ingredients into wet ingredients until smooth. Add carrots and walnuts and mix until well combined, Pour batter into prepared well greased pan and bake until wooden toothpick inserte into cake comes out clean, about 45-50 minutes. Allow to cool completely in pan and invert to release cake.

FROSTING

Gradually beat confectioner's sugar into cream cheese and vanilla extract with electric mixer. Spread frosting on cooled cake
