- 1 head of garlic, minced
- 3 oranges, juiced
- 3 limes, juiced
- 3 lemons, juiced
- 1/4 cup fresh mint, chopped fine
- 1/4 cup fresh oregano, chopped fine
- 1/4 cup cilantro, chopped fine
- 1/4 cup olive oil
- 1/2 tsp ground cumin
- 1/2 tsp salt, kosher

Use this recipe for two portions of chicken, fish, shrimp, pork, or vegetables. Marinate chicken and pork for about 8 hours or overnight. Marinate fish or shrimp for only an hour.

As you can see by the directions, this recipe is very simple. Using all fresh local ingredients gives this marinade its star power. Bright citrus and earthy herbs and married together with some cumin and olive oil to provide a well balanced flavor. Grilling the mojo marinated food is the best application. If you serve this alongside a salad you might not even need a dressing!
