"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Dissolve yeast in 1/2 cup warm water and 1/2 tsp sugar.) Add butter to 1 cup warm water then add sugar and eggs ( in the large bowl. Add yeast mixture to butter mixture and mix. Stir in 2 cups flour and the salt. Beat mixer until smooth and well blended. Add remaining flour to make a soft dough. If using a bread machine mix for 10 minutes. Cover and allow to rise in warm place until double in bulk. Punch down and shape into rolls. If you are making Cinnamon rolls, take one half of the dough and roll out to a 12 x 16 inch rectangle. Roll it to 1/4 inch thickness. Spread with butter over the dough, Sprinkle with brown sugar, cinnamon, and walnuts. ( If you like raisins, add them.) Roll up at the 12 inch end until you have a tube like a jelly roll. Using thread or dental floss, cut the dough into 11/2-2 inch slices. This will make the big cinnamon rolls. Place on buttered baking sheet. Press them all down so they are all the same size. Let rise until double. Bake at 350 for 20 minutes or until golden brown. You still have some dough left to make a pan of rolls.
When you take the cinnamon rolls out of the oven, turn them upside down, to get the carmel on the bottom of pan onto the rolls.

You can frost the cinnamon rolls with cream cheese frosting.

I have tried to get this as close to Grandma's recipe as I could. As we all know, she never measured, and this is just what I can remember her doing. Aunt Lee
