4 C flour
1 lb dried apricots
2 C sugar
1 t salt
2 t baking soda
2 C water
¾ C shortening
2 eggs

Directions:
Directions:
1. Stir flour with baking soda
2. Cut apricots in small pieces and cook in water for about 5 minutes.
3. While water is still hot add sugar, shortening, and salt. Let mixture cool
4. Add the beaten eggs and the flour/baking soda mixture to the cooled apricot mixture
5. Pour into 3 well-greased loaf pans
6. Bake for about 1 hour at 350º
