1 peck pears (the hard type, not the creamy soft ones)
5 bell peppers – green
5 red peppers
(a couple of hot peppers if you like)
5 BIG Vidalia onions
5 cups cider vinegar
5 cups sugar
1 tbsp salt
3 tbsp pickling spices (that’s the way they sell it – usually in a box or jar)

Directions:
Directions:
Grind the pears peppers and onions using coarse blade and drain. Place spices in a cheesecloth and tie into a bag. Combine sugar and vinegar in a dishpan and add the spice bag. Bring to a boil and add the pears and vegetables. Return to a boil and boil for 20 minutes. Pack into hot canning jars and process in a boiling water bath.

I was given the recipe by the Eatons, and it became a family favorite. I gave up and threw in the potholder when I made a batch of 10 quarts and within a month, Curt and Mama had eaten it all. I will never forget coming home from work and finding Mama eating it from the jar with a spoon!!!
