3 limes
3 eggs
green coloring (optional)
1 can sweetened condensed milk
8” pie crust
˝ cup sugar

Directions:
Directions:
Bake the pie crust. Grate rinds of limes. Squeeze juice out of limes and pour in with grated rinds. Separate eggs and add yolks to lime. Add 3 drops green coloring and mix well. Pour milk in and stir. Pour into pie crust. Beat egg whites and sugar until stiff peaks. Spoon on top of the pie and make sure all of the pie is sealed, then place in the oven and broil until lightly browned.

Note: customize by substituting the lime with lemon juice concentrate or frozen lime or margarita concentrate – whatever you prefer.
