1 cup smoked ham. (cubed) 8 oz. optional
⅓ cup green onions with tops, thinly sliced
1 can condensed cream of potato soup
½ can whipping cream
½ t salt
⅛ t black pepper
4 large unpeeled potatoes (about 2 lbs,)
1 C seasoned croutons

Directions:

1. Preheat oven to 350º
2. Cube ham (optional) and thinly slice green onions
3. In a large bowl combine ham, onions, soup, cream, and pepper (set aside).
4. Thinly slice potatoes into bowl. Fold potatoes into soup mixture
5. Pour into casserole dish and cover with aluminum foil.
6. Bake 50 minutes
7. Remove foil. Using a grater, grate croutons over potatoes
8. Return to to oven uncovered
9. Continue baking uncovered for 15-20 minutes until potatoes are tender.
