Cake:
4 packages cream cheese (8 oz each), softened to room temperature
1 cup (less 1 tbsp) sugar
6 large eggs, separated
1 tsp vanilla
½ cup lemon juice
1 tsp almond
pinch salt
1 tsp rum

Crust:
20 graham crackers, crushed
¼ cup butter, melted
2 tbsp sugar
pinch salt

Topping:
2 cartons sour cream (16 ounce each)
4 tbsp sugar
1 tsp vanilla
cherry or blueberry pie filling to garnish (optional)

Crust:
Mix well, press on bottom of pan and up the sides a little. Bake 15 min in 350º oven. COOL THOROUGHLY.

Cake:
Add egg yolks to cream cheese, mixing well. Add sugar, lemon juice, salt and flavorings. Beat egg whites until stiff but not dry. Carefully cut whites into cheese/egg mixture. Pour into prepared pan. Bake until top springs back or until cake tester comes out clean (from 35 minutes to an hour). Cool 30 min.

Topping:
Spread topping on cooled cake. Bake 10 min more. Refrigerate at least six hrs before serving. Use regular cherry, dark sweet cherry or blueberry pie filling to garnish as desired.
