Lemon Meringue Pie Recipe

1 1/2 cup sugar
1/3 cup cornstarch
1 1/2 cup water
3 egg yolks slightly beaten
3 tbsp butter
2 tsp grated lemon rind
1/2 c up lemon juice

3 egg whites
1/4 tsp cream of tarter
6 tbsp sugar
1/2 tsp vanilla

Mix sugar and cornstarch gradually stir in water
Cook over med heat stirring constantly until mixture thickens and boils for 1 min
Gradually stir at least half hot mixture into egg yolk
Blend with hot mixture in pan
Boil 1 min
Remove from heat, stir in butter, lemon rind, juice
Pour into shell
Keep meringue on hot filling and seal
Bake 10 minutes at 400
