3 eggs
1 cup grated Parmesan cheese
1/2 cup Canola or Vegetable Oil
1 Tablespoon parsley [fresh or dried]
2 cloves garlic - minced [or use 1 Tablespoon from jar of minced garlic]
1/4 teaspoon salt
1/4 teaspoon pepper
4 cups tightly packed shredded [or thinly sliced] zucchini [I used shredded]
1 cup bisquick
1 onion [chopped - or I shred it like the zucchini-this spreads the flavor around more.]

Directions:
Directions:
In large bowl, whisk [mix] the first 7 ingredients. Stir in the zucchini, baking mix and onion. Pour into a GREASED 9 inch deep-dish pie plate. Bake at 350 for 25-35 minutes until lightly browned - check to make sure with knife.
