12 egg whites
1 cup flour
1/2 cup powdered sugar
1/2 tsp. cream of tartar
1 cup sugar
1/2 tsp. salt
1 1/2 tsp. vanilla
1/2 tsp almond extract

Directions:
Directions:
In medium bowl, combine dry ingredients.
In separate bowl, combine egg whites, vanilla and almond extract.
Beat until stiff peaks form.
Gently fold dry ingredients into egg mixture, in increments of 4 cups.
Make sure the mixture is well blended but take care not to over blend; it will destroy the airiness of the cake.
Carefully pour mixture into a tube pan.
Cut through mixture with knife to remove any large air pockets.
Bake at 375° for 30-35 minutes.
Turn cake upside down while still in pan and allow to cool completely
