Hummingbird Cake Recipe

2 cups flour
2 cups sugar
1 teaspoon soda
1 teaspoon salt
1 teaspoon ground cinnamon
3 eggs, lightly beaten
2 teaspoons vanilla
1 1/2 cups oil
1 (8 ounce) crushed pineapple (do not drain)
2 cups mashed or 3-4 large bananas
1 cup pecans, almonds or walnuts chopped

3 - 9" round pans or 1 - 9" x 13" pan. Bake at 350* for 30-35 minutes. Frost with cream cheese frosting.

Pecan Cream Cheese Icing:

1/4 cup unsalted butter
8 ounce cream cheese
1 pound powdered sugar
1 teaspoon vanilla
1/2 cup chopped pecans
