3/4 cups Sugar
1/3 cup Flour
1/2 teaspoon Salt
1 tablespoon Lemon Juice
2 Eggs, slightly beaten
1 #2 can crushed Pineapple, undrained
1 cup Dairy Sour Cream

Merinque Topping:
2 Egg Whites
1/2 teaspoon Vanilla
1/4 teaspoon Cream of Tarter
1/4 cup Sugar

Directions:
Directions:
Mix sugar, flour, and salt. Stir in pineapple, sour cream, lemon juice. Cook until it thickens, about 2 minutes once hot. Temper your egg yolks (Stir small amount into egg yolks) then mix into saucepan. Cook and stir 2 minutes more. Pour into baked pie shell after cooling slightly.

Merinque Topping:
Mix together and whip until peaks develop. Spread on pie sealing down to the crust. Put in oven until light browned and remove.

This is one of best pies I've had. Aunt Velma had real flair for them, but mom ran a close second. Nobody could beat them when it came to pies. This is one you'll fight over the last piece.
