1 cup long grain white rice
2 Tablespoons butter
1 cup chopped onions
1 cup evaporated milk
1/2 pound American processed cheese loaf, cubed
1 teaspoon salt
1/2 teaspoon white pepper
1 (16 ounce) package frozen broccoli cuts, thawed, drained
1 sleeve snack crackers (about 36 crackers) Ritz crushed
1/2 cup butter, melted

Cook rice according to package direction. Meanwhile, in a large saucepan, melt butter over medium heat. Add onions and aute until softened (about 5 minutes). Add evaporated milk, cheese, salt and pepper; stirring until cheese melts. Stir in broccoli and cooked rice. Transfer to a casserole dish that has been sprayed with cooking spray. Bake, uncovered, in a preheated 350* oven 10 minutes. In small bowl, combine cracker crumbs and melted butter. Sprinkle over casserole; continue baking 10 minutes or until casserole is bubbly and crackers are golden brown. Bake 30 minutes.
