1 medium onion, minced
2 tbsp margarine
1 can black-eyed peas, drained and rinsed
1 cup sour cream
1 can artichoke hearts, drained and chopped finely
1 cup mayonnaise
1 envelope buttermilk ranch salad dressing mix
1 cup shredded mozzarella cheese
2 tbsp grated parmesan cheese

Combine butter and onion in bowl and microwave on high for 1 minute. Combine remaining ingredients and mix well. Spoon into a baking dish. Bake 350º for 30 minutes. Serve with crackers or tortilla chips.
