1¼ lb. skinless salmon fillet
¼ c. chopped fresh chives or finely chopped green onion
1 tsp. baking powder
¼ c. flour
1 egg, lightly beaten
¾ tsp. salt
½ tsp. black pepper
4 T. mayonnaise

½ c. panko crumbs plus 2 T. for coating
2 T. olive oil

Directions:

Finely chop salmon on a cutting board or in a food processor and place in a medium bowl. Add chives or onion, salt & pepper, and mayo. Toss to combine. Shape mixture into 2-inch to 3-inch wide patties. Place panko crumbs in a shallow dish and press each patty in them to coat both sides.

Heat oil in a large skillet over medium high. Add patties and cook until golden brown, about 3 minutes per side. Serve with a spring salad and buttermilk dressing drizzled over cakes.

You can also use good quality canned salmon if you can't get fresh. Be sure to remove the skin and bones that are usually included in the canned variety.
