1 large onion, minced
Salt & Pepper
3-4 cloves garlic, minced
2 lbs. ground chuck or can use combo of chuck, ground pork and veal. Do not use extra lean.
2 eggs, beaten
1- 11/2 c. grated Pecorino Romano cheese
1/4 c. fresh italian parsley, chopped
1 .c. Italian seasoned breadcrumbs
Garlic powder to your taste
Onion powder to your taste
1/2 c. water
Milk to moisten

1.) Coat a pan with olive oil, add onions and salt them generously. Cook til very soft. Add garlic and saute another 2-3 min. Set aside and allow to cool.

2.) In large macaroni bowl, combine meat, cheese,eggs, parsley, bread crumbs, garlic powder and onion powder. Add the onion mixture and more salt and mix. Add the water. Mixture should be moist. If not, add some milk.

3.) Make a mini burger and fry it to make sure mixture has enough taste. It should taste really good--if not, it probably needs more salt. Shape into meatballs about the size of golf balls. Place on sprayed cookie sheet and bake at 375 about 13-15 min til browned slightly. Drop them in your hot sauce.
